Maltitol has good temperature and chemical stability. Degradation occurs when heated above 200℃ (depending on time, temperature, and other major conditions). Maltitol reacts with amino acids to turn brown. Only when the relative humidity is 89% or higher at 20℃.

Source and Preparation |
Maltitol is prepared from hydrogenated malt syrup. The starch is hydrolyzed to produce a high concentration of maltose, which is then hydrogenated with a catalyst. After purification and concentration, the syrup is crystallized.
