Glucose isomerase (GI, EC 5.3.1.5), also known as D-xylose ketol isomerase, xylose isomerase (XI), xylose ketoisomerase, or xylose ketol-isomerase, is one of the three most widely produced industrial enzymes, alongside amylase and protease. It plays a crucial role in the industrial production of high-fructose corn syrup (HFCS) and can also enhance cellulosic ethanol yields. Additionally, glucose isomerase is utilized in the manufacture of low glycemic index foods.
