The components of this product are individually produced through submerged fermentation of selected microbial strains, followed by purification and formulation. It is meticulously formulated based on the mucilage composition of coffee cherries and field trials to effectively remove the mucilage from depulped coffee cherries.
Coffee mucilage is composed of pectic substances, cellulose, and neutral non-cellulosic polysaccharides. This product includes essential activities for degrading coffee mucilage, such as polygalacturonase, pectin lyase, and cellulase. These enzymes work together to efficiently break down mucilage components, allowing for their rapid dissolution into the water phase and facilitating the effective demucilaging of coffee beans.
