Alpha-Acetolactate Decarboxylase is produced through submerged fermentation of Bacillus subtilis followed by purification and formulation. This enzyme is extensively used in food processing. Diacetyl, the oxidative decomposition product of α-acetolactate, serves as an intermediate in the synthesis of amino acids such as valine and isoleucine in yeast. This decomposition process is typically slow in yeast, but Alpha-Acetolactate Decarboxylase can efficiently expedite the transformation of α-acetolactate into acetoin, thereby avoiding the formation of the diketone responsible for off flavors in beer. Consequently, this enzyme significantly reduces the diacetyl levels in beer and shortens the diacetyl reduction time, hence saving beer maturation time.
