Laccase is produced by submerged fermentation of Aspergillus oryzae, followed by purification and formulation. This enzyme catalyzes the oxidation of a broad range of substrates including phenols, aromatic amines, carboxylic acids, steroid hormones, metalloorganic compounds, and some non-phenolic compounds. The higher the redox potential of laccase, the broader its substrate specificity. Laccase is a polyphenol oxidase (ρ-dihydric phenol oxidase, EC 1.10.3.2) containing four copper ions, classified as a blue copper oxidase. It exists as a monomeric glycoprotein and is found in fungi, bacteria, and plants. Laccase primarily acts on phenolic compounds, facilitating one-electron oxidation and can catalyze the ring-cleavage reactions of aromatic compounds.
