Brewing β-Glucanase Powder for Enhancement of Under-Modified Malt

The β-glucanase preparation is produced through submerged fermentation using a carefully selected Trichoderma reesei strain, followed by purification, drying, and formulation. This preparation primarily contains β-glucanase, along with additional beneficial activities from cellulase, xylanase, and pentosan-degrading enzymes.
β-Glucans, composed of long chains of β-1,3- and β-1,4-linked glucose molecules, are prevalent in barley, with 90% of barley β-glucans having this structure. While native β-glucanases develop during malting, their activity often diminishes during kilning due to heat instability. This preparation provides supplemental β-glucanase activity to compensate for the loss, ensuring effective β-glucan breakdown and satisfactory brewing results.
