Tannase catalyzes the hydrolysis of ester and depside bonds found in hydrolyzable tannins like tannic acid, resulting in the production of glucose and gallic acid. During its catalytic action, tannase sequentially breaks down gallic acid glucose ester from tannic acid into intermediate compounds including 1,2,3,4,6-gallic acid tannin, 2,3,4,6-tetrapalic acid tannin, and finally into monomeric gallic acid and glucose.
