During its catalytic action, tannase sequentially breaks down gallic acid glucose ester from tannic acid into intermediate compounds including 1,2,3,4,6-gallic acid tannin, 2,3,4,6-tetrapalic acid tannin, and finally into monomeric gallic acid and glucose.
