This product is produced through submerged fermentation of Bacillus subtilis, followed by purification and formulation. It is a thermally stable debranching enzyme that functions effectively at low pH levels and is widely used in starch sugar processing.
Pullulanase, a type of isoamylase, selectively hydrolyzes α-1,6-glucosidic linkages in pullulan, starch, and oligosaccharides. This enables the complete hydrolysis of branched starches. When used in conjunction with other enzymes, such as glucoamylase and β-amylase, it accelerates saccharification and enhances the yield of glucose or maltose.
