Glucose isomerase (GI, EC 5.3.1.5; also referred to as D-xylose ketol isomerase, xylose isomerase (XI), xylose ketoisomerase, and xylose ketol-isomerase) ranks among the top three most widely manufactured industrial enzymes, alongside amylase and protease. This enzyme is heavily utilized in the production of high-fructose corn syrup (HFCS) in the industry. Additionally, it plays a role in increasing cellulosic ethanol yields and the production of foods with a low glycemic index.
