Glucosamine-2-epimerase for Synthesis of Sialic Acid Substances

Glucosamine-2-epimerase is produced by submerged fermentation followed by separation, ultrafiltration and formulation. The enzyme catalyzes the interconversion between N-acyl-D-glucosamine and N-acyl-D-mannosamine and is a key enzyme in the synthesis of N-acetyl-D-neuraminic acid, which is a precursor for the synthesis of other sialic acid substances.
