The product is produced through submerged fermentation of a carefully selected microbial strain, followed by separation, formulation, and drying. It primarily contains cellobiase, along with additional beneficial activities such as rhamnosidase, xylanase, β-glucanase, cellulase, and other hemicellulases.
Cellobiase efficiently hydrolyzes glycosidic linkages with β-configuration to produce aglycones. This enzyme can be used as an alternative to acid or alkali in traditional processes for the deglycosylation of glycosides.
