1-[1-Deoxy-2,3:4,5-bis-O-(1-methylethylidene)-β-D-fructopyranos-1-yl]-L-proline is an intermediate in the synthesis of Fructose-proline diastereomer mixture. Fructose-proline is an Amadori compound, that has the potential to alter cellular adhesion, inhibit cancer metastasis and induce apoptosis.
