This product is produced through submerged fermentation of a selected microbial strain, followed by purification, formulation, and drying. Lactase, also known as β-galactosidase, is primarily used in the dairy industry to help individuals with lactase deficiency enjoy dairy products comfortably. Lactase catalyzes the hydrolysis of lactose into glucose and galactose. Under certain conditions, it also exhibits transferase activity, converting galactose into galactooligosaccharides.
