Monohydrate is moisture-free and stable under humid conditions. It is thermally stable and does not participate in the Maillard reaction. Under acidic conditions, lactiol hydrolyzes slowly to form sorbitol and galactose. Lactiol has strong resistance to microbial decomposition. Store in an airtight container. The storage period is more than 3 years when it is stored in a sealed container at 25℃ with 60% relative humidity.
