Pear Juice Clarification Enzyme Pectinase

This pectinase is specifically designed for the clarification of pear juice. It is derived from carefully selected microbial strains through submerged fermentation, followed by purification and formulation. The enzyme effectively breaks down pectin and other viscous substances in pear juice, reducing viscosity and facilitating the precipitation of insoluble fibers and polyphenols.
While pears are relatively low in pectin, their high content of polyphenol-rich stone cells and other viscous polysaccharides complicates juice clarification. This product is formulated with additional activities beyond pectinase to target these challenging substances. It has demonstrated outstanding performance in clarifying pear juice during processing.
